Jamaican Jerk Alfredo Corn

Step 1
Bring a large pot of water to a boil. Add the corn and cook for about 5 minutes, or until tender. Drain and set aside.
Step 2
Heat a sauté pan over medium heat. Add the butter, garlic, shallot and red bell pepper and sauté for 3 minutes. Whisk in the Jamaican jerk spice and heavy cream. Simmer for 2 minutes. Add the Parmesan cheese and mix until the sauce is smooth and the cheese is melted. Season with kosher salt and black pepper.
Step 3
Add the cooked corn to the sauce and spoon the sauce over it to coat completely. Simmer for 2 minutes. Garnish with green onions and shredded Parmesan cheese. Serve warm.
