Sonoran Fajita Hot Dogs
Progress saves automatically on this device.
Step 1
Heat the olive oil in a sauté pan over medium heat. Add the green bell pepper, red bell pepper and onion and sauté for 10 minutes, or until semi-soft. Add the fajita seasoning and cook for 2 more minutes. Transfer the vegetables to a bowl and set aside.
Step 2
Mix the mayonnaise and yellow mustard in a small bowl and set aside.
Step 3
Heat a barbecue grill or heavy sauté pan to medium. Wrap each sausage or hot dog with 1 bacon slice. Cook, turning, until the bacon is crisp on all sides and the sausage or hot dog is cooked through according to its package directions. Remove and set aside.
Step 4
For stovetop preparation, remove all but 1 TBSP bacon grease from the pan and toast the buns cut-side down until lightly browned. For grilling, lightly dip the cut sides in bacon grease and grill for about 30 seconds, until lightly browned.
Step 5
Spread each bun with the mayonnaise mixture and place on a baking sheet. Add one bacon-wrapped sausage or hot dog to each bun. Top each with one-quarter of the fajita vegetables and cheese, then garnish with green onions and crispy jalapeños.
Step 6
Broil for 1 to 2 minutes, or until the cheese melts. Serve warm. The recipe may be doubled.

What if the bacon unwraps?
Place the loose end seam-side down and let it cook until it adheres before turning.
Why: The bacon was wrapped loosely or turned too soon.
Watch for: Overlap the bacon slightly and begin cooking with the end underneath.
What if the bacon is not crisp?
Lower the heat slightly and continue turning until the fat renders and all sides crisp.
Why: The heat was too high or the bacon was thick.
Watch for: Use thin-cut bacon and allow enough time for rendering.
What if the bacon burns before the sausage is hot?
Move it to indirect grill heat or lower the pan heat and continue cooking gently.
Why: The cooking surface was too hot.
Watch for: Turn often and follow the sausage package's heating directions.
What if the vegetables are watery?
Increase the heat slightly and cook uncovered until the liquid evaporates.
Why: The pan was crowded or the vegetables released moisture.
Watch for: They should be semi-soft with no pool of liquid.
What if the vegetables are too soft?
Remove them from the pan immediately and spread them out to stop cooking.
Why: They cooked longer than the directed 12 minutes.
Watch for: Retain a little firmness in the centers.
What if the buns become greasy?
Blot the cut sides lightly and toast them briefly on a dry surface.
Why: The buns were dipped too deeply in bacon grease.
Watch for: Use only a thin film of grease on the cut surface.
What if the buns burn?
Remove them immediately and scrape off light char or replace severely burned buns.
Why: Bacon fat browns bread quickly over medium heat.
Watch for: Check after 30 seconds and remove when lightly golden.
What if the cheese does not melt?
Return the baking sheet under the broiler for 15-second intervals.
Why: The broiler was not fully heated or the cheese layer was thick.
Watch for: Remove as soon as the cheese softens and bubbles.
What if the mayonnaise mixture is too sharp?
Stir in mayonnaise 1 tablespoon at a time.
Why: Yellow mustard brands vary in acidity.
Watch for: The spread should taste creamy with a noticeable but balanced mustard flavor.
What if the assembled hot dogs are difficult to eat?
Remove a little vegetable topping and press the remaining toppings gently into the melted cheese.
Why: The peppers were divided unevenly or too many crispy jalapeños were added.
Watch for: Keep the filling below the bun edges.
What can I substitute for the jalapeño-cheddar sausages?
Use 4 hot dogs and cook them with the bacon as directed.
Why: Hot dogs retain the handheld structure but have less chile and cheese flavor.
Watch for: Keep the crispy jalapeños and cheese to preserve the intended flavor.
What can I substitute for the bell peppers?
Use 2 bell peppers of any color, thinly sliced.
Why: Any bell pepper supplies the same fajita texture and sweetness.
Watch for: Cook only until semi-soft.
What can I substitute for the shredded cheese?
Use 1 cup shredded Monterey Jack cheese.
Why: Monterey Jack melts smoothly and suits the jalapeño and fajita flavors.
Watch for: Broil only until melted.
What can I substitute for crispy jalapeño pieces?
Use well-drained sliced pickled jalapeños as needed.
Why: They provide chile tang and heat but not the same crunch.
Watch for: Drain well so the buns do not become soggy.
What can I substitute for olive oil?
Use 1 TBSP avocado oil for the vegetables.
Why: Avocado oil handles sautéing heat with a neutral flavor.
Watch for: Keep the heat at medium and avoid over-softening the peppers.
