Roasted Korean Parmesan Artichokes
Progress saves automatically on this device.
Step 1
To make the sauce, whisk together the melted butter, gochujang, honey, soy sauce, rice vinegar, garlic, sesame oil and ginger paste. Set aside.
Step 2
Fill a large bowl with cold water and squeeze in the juice of the lemon or lime. Add the squeezed halves to the water. Trim each artichoke stem, leaving about ½ inch attached, and peel the remaining stem. Cut about ½ inch off the top. Pull off the tough dark-green outer leaves until the pale-yellow leaves appear. Halve lengthwise, scrape out any fuzzy choke and place in the citrus water.
Step 3
Drain the prepared artichokes and dry them completely with paper towels.
Step 4
Preheat the oven to 425°F. Toss the artichoke halves with olive oil, kosher salt and pepper. Lightly spray the sheet pan with olive oil if desired and arrange the artichokes cut side down.
Step 5
Roast for approximately 20 minutes, or until tender and browned. Remove any woody leaves that curl or over-brown. Sprinkle Parmesan over each half and roast 1 minute more.
Step 6
Arrange on a platter and serve with the gochujang sauce. Dip the tender heart into the sauce and bite it off; eating the remaining leaves is optional.

What if the cut artichokes turn brown?
Return them to the citrus water immediately.
Why: They were exposed to air.
Watch for: Minor oxidation changes the color; citrus water limits further browning. Roasting does not reverse the discoloration.
What if the artichokes steam instead of brown?
Blot them dry and spread them farther apart.
Why: They carried excess water or the pan was crowded.
Watch for: The cut sides should make full contact with the pan.
What if the outer leaves are still tough?
Remove the woody leaves and eat the tender heart.
Why: Baby artichokes can still have fibrous outer leaves.
Watch for: The pale inner leaves should be tender.
What if the cut sides burn?
Turn the halves over and lower the oven to 400°F.
Why: The pan or oven ran hot.
Watch for: The surfaces should be deep golden, not black.
What if the hearts are not tender after 20 minutes?
Cover loosely with foil and roast 5 minutes more.
Why: The artichokes were larger than average.
Watch for: A knife should enter the heart easily.
What if the sauce is too spicy?
Whisk in more melted butter and a little honey.
Why: The gochujang was hotter than expected.
Watch for: The heat should not overpower the artichoke.
What if the sauce separates?
Whisk vigorously while it is warm.
Why: The butter cooled or the mixture sat.
Watch for: The sauce should look glossy and combined.
What if the Parmesan will not melt?
Return the pan to the oven for 1 minute.
Why: The cheese was added after the pan cooled.
Watch for: The Parmesan should adhere to the hot halves.
What if the garlic tastes raw in the sauce?
Warm the sauce gently over low heat for 1 to 2 minutes while whisking, just until the garlic’s sharpness softens. Add a teaspoon of water if needed to keep it loose.
Why: The minced pieces were large.
Watch for: Use very finely minced garlic. Do not boil the butter sauce hard or let it scorch.
What if the artichokes are greasy?
Transfer them to a clean platter lined briefly with paper towel.
Why: Too much oil was used.
Watch for: The surface should be glossy, not pooled with oil.
What can I substitute for Parmesan cheese?
Use ¼ cup finely grated Pecorino Romano.
Why: It provides a similar savory finish but is saltier.
Watch for: Reduce added salt if needed.
What can I substitute for baby artichokes?
Use drained canned whole artichoke hearts and roast only until browned.
Why: They are already tender and need less time.
Watch for: Dry them thoroughly before roasting.
What can I substitute for butter in the sauce?
Use 2 tablespoons plant-based butter.
Why: It keeps the sauce emulsified with a similar texture.
Watch for: Choose an unsalted variety.
What can I substitute for rice vinegar?
Use 1 teaspoon mild white wine vinegar.
Why: It provides comparable acidity.
Watch for: Avoid strongly flavored vinegar.
What can I substitute for olive oil?
Use 2 tablespoons neutral avocado oil.
Why: It tolerates the roasting heat without changing the sauce.
Watch for: Coat the halves lightly.
