Tom Kha Shrimp Linguine Bowls
Progress saves automatically on this device.
Step 1
Bring a pot of salted water to a boil. Cook the linguine until al dente. Drain and set aside.
Step 2
Season the shrimp with kosher salt and pepper. Heat 1 tablespoon olive oil in a medium sauté pan and sear the shrimp until cooked through, about 2 minutes per side. Remove and set aside.
Step 3
In the same pan, add 1 teaspoon olive oil if needed. Add the sliced mushrooms and cook for 4 to 5 minutes, or until nicely browned. Transfer to a plate. Sear the zucchini in the same skillet for 2 to 3 minutes, or until cooked through, and transfer to the plate with the mushrooms.
Step 4
Reduce the heat to medium. Add the garlic and cook for 1 minute, until fragrant. Add the Tom Kha paste and cook for 1 minute, stirring constantly to bloom it. Deglaze with the stock.
Step 5
Add the coconut milk and fish sauce and stir well. Bring to a gentle simmer for approximately 10 minutes. Taste and add more Tom Kha paste or fish sauce if desired. Add a little sugar if needed for balance.
Step 6
Return the vegetables and simmer for 1 minute. Remove from the heat and stir in the lime juice. Return the shrimp and simmer 1 minute to warm.
Step 7
Divide the linguine among wide shallow bowls and ladle the broth over it, placing shrimp and vegetables on top. Garnish with scallions, cilantro, red chile, crushed red pepper and lime wedges if desired.

What if the shrimp turns rubbery?
Remove it from the pan immediately.
Why: It cooked too long.
Watch for: Fresh shrimp should be firm and opaque and reach 145°F. Once cooked, rewarm only briefly in the finished broth to avoid toughening it.
What if the mushrooms steam instead of brown?
Spread them out and let their liquid evaporate.
Why: The pan was crowded.
Watch for: Edges should become browned.
What if the broth separates?
Lower the heat and stir gently.
Why: The coconut milk boiled too hard.
Watch for: The broth should look creamy.
What if the broth is too spicy?
Add more coconut milk and a pinch of sugar.
Why: The Tom Kha paste was strong.
Watch for: The heat should be balanced by coconut.
What if the broth tastes flat?
Add fish sauce a few drops at a time.
Why: It needs more savory seasoning.
Watch for: Retaste before adding salt.
What if the broth is too salty?
Add unsalted stock and coconut milk.
Why: The paste or fish sauce was salty.
Watch for: Adjust before returning the shrimp.
What if the broth is too sour?
Add a small pinch of sugar and coconut milk.
Why: The lime or paste was very acidic.
Watch for: Balance should be tangy, not sharp.
What if the broth is too thin?
Simmer gently uncovered for several minutes.
Why: The stock ratio was high or the coconut milk was light.
Watch for: The broth should lightly coat the noodles.
What if the zucchini becomes mushy?
Remove it and return it only at serving.
Why: It cooked too long in the broth.
Watch for: The cubes should hold their shape.
What if the pasta clumps?
Toss it with a spoonful of hot broth before portioning.
Why: It cooled after draining.
Watch for: The strands should separate easily.
What can I substitute for shrimp?
Use 1 pound bite-size chicken breast and cook to 165°F.
Why: Chicken suits the broth but needs longer cooking.
Watch for: Verify the thickest piece with a thermometer.
What can I substitute for zucchini?
Use 1 sliced yellow squash.
Why: It has similar moisture and cook time.
Watch for: Do not overcook.
What can I substitute for coconut milk?
Mix roughly 2 parts unsweetened coconut cream with 1 part water, then measure 13.5 fluid ounces of the diluted mixture to replace the can. Do not use sweetened cream of coconut.
Why: Dilution approximates full-fat coconut milk.
Watch for: Whisk before adding.
What can I substitute for seafood stock?
Use 2 cups low-sodium chicken stock.
Why: It keeps the broth savory without seafood stock.
Watch for: Taste before adding more fish sauce.
What can I substitute for olive oil?
Use the same amount of neutral avocado oil.
Why: It handles searing with little flavor change.
Watch for: Heat before adding shrimp.
