Pepperoni Pizza Chicken Cacciatore
Progress saves automatically on this device.
Step 1
Season the chicken with kosher salt and pepper. Heat the olive oil in a large, heavy ovenproof skillet with high sides over medium heat. Brown the chicken on both sides, about 2 minutes per side. Transfer to a plate.
Step 2
Add the sausage and brown it, breaking it into small pieces. Add the onion, bell pepper and garlic and sauté for 3 minutes. Add the dried basil and oregano and sauté for 1 minute.
Step 3
Add the wine and simmer until reduced by half. Add the crushed tomatoes, chicken stock and capers. Return the chicken and spoon sauce over it. Season with kosher salt and pepper.
Step 4
Cover and simmer for about 30 minutes, or until the chicken is cooked through and tender. Remove the lid and simmer over medium heat for 15 minutes more to thicken the sauce.
Step 5
Preheat the broiler. Top with mozzarella and pepperoni and broil until the pepperoni is crisp and the mozzarella is melted.
Step 6
Garnish with basil, Parmesan and red chili flakes. Serve over pasta if desired.
