Chicken Cutlets with Green Vodka Sauce
Progress saves automatically on this device.
Step 1
Heat a large sauté pan over medium heat and add the butter and 2 tablespoons olive oil. Add the onion and sauté until tender, about 10 minutes. Add the vodka and cook for 2 minutes to cook off some of the alcohol.
Step 2
Blend the yellow cherry tomatoes and garlic until smooth. Add the puree to the onions and simmer on low, stirring occasionally, for 15 to 20 minutes, until some liquid evaporates and the sauce thickens.
Step 3
Stir in most of the heavy cream, white pepper, nutmeg and Parmesan. Simmer on low for 10 minutes, or until creamy. Season with kosher salt, then turn off the heat and move the pan off the burner.
Step 4
Blend the basil and parsley with the reserved splash of cream until smooth. Starting with half, stir the herb mixture into the vodka sauce. Taste and add more for a stronger basil flavor.
Step 5
Butterfly and pound the chicken breasts thin. Set up three bowls: flour in the first, beaten eggs in the second, and Italian breadcrumbs, panko, garlic powder, red pepper flakes and Parmesan in the third. Season the chicken on both sides with kosher salt and pepper. Coat each piece in flour, then egg, then the breadcrumb mixture.
Step 6
Heat a large sauté pan over medium heat and add enough olive oil to coat the bottom. Fry the chicken for approximately 3 minutes per side, or until lightly golden and cooked through to 165°F. Transfer to a serving platter.
Step 7
Spread green sauce over the bottom of an ovenproof pan and top the sauce with 1 cup shredded mozzarella. Preheat the broiler and broil until the mozzarella is melted and lightly browned. Pour the melted mozzarella and sauce over the chicken, garnish with parsley or basil and serve immediately.

What if the sauce is watery?
Simmer it longer before adding cream.
Why: The tomatoes released extra liquid.
Watch for: The puree should visibly thicken.
What if the cream sauce separates?
Lower the heat and whisk in a splash of cream.
Why: It boiled too hard.
Watch for: The sauce should look smooth.
What if the sauce is not green enough?
Blend in more of the herb puree a little at a time.
Why: Only half the herb mixture was added.
Watch for: Stop when flavor and color are balanced.
What if the basil flavor is too strong?
Stir in more tomato-cream sauce.
Why: Too much herb puree was added.
Watch for: The vodka sauce should still taste creamy.
What if the breading falls off?
Let the coated cutlets rest 5 minutes before frying.
Why: The coating did not adhere.
Watch for: Handle each cutlet only when turning.
What if the crumbs brown before the chicken is done?
Lower the heat and finish gently.
Why: The oil was too hot.
Watch for: The center must reach 165°F.
What if the chicken is greasy?
Drain it briefly on a rack or paper towel.
Why: The oil was not hot enough.
Watch for: The crust should feel crisp.
What if the cutlets stick?
Wait until a crust forms before turning.
Why: They were moved too soon.
Watch for: They should release naturally.
What if the mozzarella will not brown?
Move the pan closer to the broiler for 30 seconds.
Why: It was too far from the heat.
Watch for: Watch continuously.
What if the breading gets soggy after I add the sauce?
Keep the cooked cutlets separate from the green sauce until you are ready to serve. Let them drain on a rack rather than sit in pooled oil, then add the hot sauce and melted cheese just before eating. Spoon on only as much sauce as you need.
Why: Moisture from the sauce and trapped steam soften the breadcrumb coating, especially when the chicken sits covered or is sauced too early.
Watch for: The breading should still feel crisp when you plate the cutlets. Keep the sauce warm separately and avoid leaving assembled cutlets standing in sauce.
What can I substitute for chicken breasts?
Use four thin turkey cutlets and cook to 165°F.
Why: They bread and fry similarly.
Watch for: Adjust time for thickness.
What can I substitute for yellow cherry tomatoes?
Use 24 ounces yellow grape tomatoes.
Why: They provide similar sweetness and color.
Watch for: Blend until smooth.
What can I substitute for heavy cream?
Use ¾ cup half-and-half and simmer very gently.
Why: It is lighter and more likely to separate.
Watch for: Do not boil.
What can I substitute for panko crumbs?
Use 1 additional cup Italian breadcrumbs.
Why: The coating will be finer and less crisp.
Watch for: Press the crumbs on lightly.
What can I substitute for olive oil when frying?
Use neutral avocado oil as needed.
Why: It tolerates frying heat well.
Watch for: Maintain a shallow even layer.
