Loaded Mushroom Gruyère Cavatelli
Progress saves automatically on this device.
Step 1
Bring a large pot of well-salted water to a boil. Cook the cavatelli until al dente. Reserve ⅓ cup pasta water, then drain.
Step 2
In a large skillet over medium heat, melt 1 tablespoon butter with the olive oil. Add the shallots and mushrooms and sauté for 5 to 10 minutes, or until the mushrooms release their liquid, the liquid evaporates and the mushrooms are tender.
Step 3
Add the remaining tablespoon butter and the cherry tomatoes. Season with kosher salt and pepper. Cook for about 5 minutes. Smash the tomatoes with the back of a large spoon and cook another 5 minutes.
Step 4
Stir in the garlic and tarragon and sauté for 1 minute. Season with kosher salt and pepper. Remove the pan from the heat, add the cognac, then return it to the heat and simmer until substantially reduced and the harsh alcohol aroma has cooked off.
Step 5
Lower the heat and stir in the heavy cream and Dijon. Simmer for 2 minutes. Gradually stir in the Gruyère and Parmesan until smooth.
Step 6
Add reserved pasta water a little at a time until the sauce is glossy and loose. Season again if needed. Add the drained cavatelli and toss gently. Serve with a green salad.

What if the mushrooms are watery?
Keep sautéing uncovered until the liquid evaporates.
Why: The pan was crowded or the mushrooms released moisture.
Watch for: The skillet should look dry before tomatoes are added.
What if the tomatoes will not burst?
Cover the pan for 1 minute, then smash them.
Why: Their skins were firm.
Watch for: Juices should release into the pan.
What if the cognac flames?
Turn off the heat and cover the pan until the flame goes out.
Why: Alcohol contacted a flame or very hot surface.
Watch for: Do not move or carry the pan while flaming.
What if the cognac tastes harsh?
Simmer it longer before adding cream.
Why: It did not reduce enough.
Watch for: The sharp alcohol aroma should fade.
What if the cream sauce separates?
Lower the heat and whisk in a splash of pasta water.
Why: The sauce became too hot.
Watch for: It should return to a smooth texture.
What if the cheese clumps?
Remove from heat and whisk in warm pasta water gradually.
Why: The cheese was added too quickly or over high heat.
Watch for: The sauce should be smooth.
What if the sauce is too thick?
Add reserved pasta water 1 tablespoon at a time.
Why: The cheese and pasta absorbed moisture.
Watch for: The sauce should look glossy.
What if the sauce is too thin?
Simmer gently for 1 to 2 minutes before adding pasta.
Why: Too much pasta water was added.
Watch for: The sauce should coat a spoon.
What if the pasta absorbs all the sauce?
Add a splash of warm pasta water and toss.
Why: The pasta rested too long.
Watch for: Serve while the sauce is loose.
What if the sauce is too salty?
Add a little unsalted cream and pasta.
Why: The cheeses and pasta water contained salt.
Watch for: Taste before final seasoning.
What can I add for protein without changing the sauce?
For an optional topping, add a poached egg cooked until both the white and yolk are firm. This adds protein; it does not replace an ingredient in the original recipe.
Why: Egg complements mushrooms and cheese.
Watch for: A set white alone does not establish egg safety. Cook the yolk until firm; the original pasta recipe contains no egg topping.
What can I substitute for assorted mushrooms?
Use 12 ounces sliced cremini mushrooms.
Why: They brown well with a consistent texture.
Watch for: Cook until all liquid evaporates.
What can I substitute for Gruyère?
Use ⅓ cup shredded fontina.
Why: Fontina melts smoothly with a milder flavor.
Watch for: Add gradually over low heat.
What can I substitute for cognac?
Use ¼ cup unsalted vegetable stock plus 1 teaspoon balsamic vinegar.
Why: It replaces moisture and depth without alcohol.
Watch for: Reduce substantially before adding cream.
What can I substitute for olive oil?
Use 1 tablespoon avocado oil.
Why: It handles mushroom sautéing well.
Watch for: Keep the butter amounts unchanged.
