Cheeseburger Fajita Bowl

Some nights I want a cheeseburger, and some nights I want fajitas. This is my happy answer to having both cravings at once. I keep the juicy burger and melted cheese right in the middle, then surround them with seasoned vegetables, black beans, sweet corn and avocado so every forkful can be a little different. It brings the comfort of an American burger together with Mexican-American fajita flavors, finished with creamy jalapeño ranch. I like a dinner that lets me chase the next delicious bite around the bowl—and this one certainly does.

Chef Notes

  • Keep the vegetables crisp-tender so they contrast with the juicy burger, creamy avocado and beans.
  • Use the same sauté pan for the vegetables and burger so the browned seasoning left in the pan contributes flavor to the patty.
  • Nutrition note: Salt and pepper listed as needed are not quantified. Cheese and ranch dressing use generic estimates.
  • How do you know the protein is done? Cook the ground beef burger to at least 160°F. Insert an instant-read thermometer sideways into the center of the thickest part, without touching the pan. The outside should be browned and the meat should feel firm, but a burger can turn brown before it is safe or stay pink after reaching a safe temperature. Use temperature as the safety check, not color or feel alone.

How to Make a Cheeseburger Fajita Bowl

1

Sauté the Vegetables

Cook the onion, peppers and mushrooms with fajita seasoning and garlic powder until slightly softened but still crisp.

2

Season the Beef

Mix the 80/20 ground beef with the measured fajita seasoning.

3

Form the Patty

Shape the seasoned beef into one evenly thick burger patty.

4

Cook the Burger

Cook the patty in the same sauté pan until its center reaches 160°F.

5

Melt the Cheese

Top the cooked patty with the thick cheese slice and allow it to melt.

6

Build the Bowl

Add the burger, fajita vegetables, beans and corn to a low-sided bowl, then finish with avocado and jalapeño ranch.

Recipe Guidance

Storage

Store the cooked burger, fajita vegetables, beans and corn in separate covered containers from the avocado and dressing. Refrigerate within 2 hours and use the cooked components within 3 to 4 days; cut avocado is best used within 1 day.

Reheating

Reheat the burger, vegetables, beans and corn in a covered sauté pan over medium-low heat or in the microwave until the burger reaches 165°F. Add fresh avocado and jalapeño ranch only after reheating.

Make Ahead

Slice the vegetables, portion the beans and corn, and mix and shape the seasoned beef patty up to 1 day ahead. Keep the raw patty covered and refrigerated separately from the vegetables and ready-to-eat ingredients.

Serving Suggestions

Serve immediately in a low-sided bowl so the burger remains easy to cut while every bite can include fajita vegetables, beans, corn, avocado and jalapeño ranch.
