Spinach/Artichoke Dip Tortellini
I think just about every party I’ve ever been to had some sort of spinach-artichoke dip. With that creamy sauce and all those delicious chunks of artichoke, I thought, “Boy, wouldn’t this make a unique pasta?” That’s how this recipe came about! I fold tender tortellini into a rich spinach-artichoke sauce, add tomatoes for a little brightness, and finish it with mozzarella and panko for a golden topping. It brings Italian filled pasta together with a favorite American party dip, turning something we usually scoop onto a chip into a comforting dish we can sit down and enjoy with a fork.

Chef Notes
- Undercook the fresh tortellini slightly because it continues cooking in the oven.
- Keep the cream sauce at a gentle simmer so it stays smooth.
- If using chicken tortellini with a raw poultry filling, follow the package directions and verify the center reaches 165°F; temperature—not appearance alone—is the primary safety check.
- How do you know the protein is done? If using chicken tortellini, follow the package directions and check the center of several of the largest filled pasta pieces with a thin-tip instant-read thermometer; chicken filling must reach 165°F. For either chicken or cheese tortellini, heat the finished casserole to 165°F at its center, away from the pan. The pasta should feel tender, the filling should be hot and set, and the topping should look golden. Temperature, not bubbling sauce or a browned top alone, is the safety check.
