One-Pot Mexican Dirty Rice
When I’m serving tacos or something delicious from the grill, I like a side dish that brings its own personality to the plate. For this rice, I took inspiration from Louisiana dirty rice and gave it a Mexican twist. Ground beef and chorizo add savory richness, while poblano, tomatoes and a little corn bring color and character. The grains cook in those flavorful juices, picking up the seasoning as they become tender. I love having a generous bowl ready for everyone to spoon alongside the main dish—and making it all in one pot leaves me a little less washing up afterward.

Mary’s Introduction
Why These Flavors Work
Chorizo and taco seasoning bring chile and spice to the savory beef base, while poblano, corn and tomato add sweetness and freshness. Toasted rice absorbs the seasoned stock and meat drippings.

Chef Notes
- Keep the pan at medium heat while toasting the rice so the grains do not scorch.
- Do not lift the lid repeatedly during the final simmer.
- How do you know the protein is done? For ground beef and pork chorizo sausage, cook to 160°F; if using poultry sausage, cook to 165°F. Check several thick meat clusters at their centers with an instant-read thermometer without touching the pan. Meat should be browned and firm with no raw-looking portions; temperature determines safety.
