Lasagna Shumai Dumplings
Progress saves automatically on this device.
Step 1
Heat a large nonstick sauté pan over medium heat. Add the olive oil and sausage and cook for about 4 minutes, breaking the sausage into small pieces. Add the onion and mushrooms and cook for another 5 minutes, or until the mushrooms release their liquid and become lightly browned. Add the garlic and sauté for 2 minutes. Add the spinach and mix. Season lightly with kosher salt and pepper. Transfer to a bowl and cool for at least 15 minutes.
Step 2
Meanwhile, mix the ricotta, ½ cup mozzarella, egg, Parmesan, basil, nutmeg, salt and pepper in a small bowl. Once the sausage mixture is completely cool, add the ricotta mixture and combine well.
Step 3
To form each dumpling, place a wonton wrapper on the work surface and moisten the edges with water. Put 1 tablespoon filling in the center, filling it about three-quarters of the way. Do not overfill.
Step 4
Hold the dumpling in one hand with the index finger and thumb forming an O. Bring all four corners toward the center, allowing the sides to fold into soft pleats while leaving the filling slightly exposed. Pinch the sides together and press the dumpling gently on a flat surface so the bottom stands upright.
Step 5
Heat the same nonstick sauté pan over medium-low heat and lightly coat the bottom with olive oil spray. Spread about 1 cup marinara over the bottom. Arrange the dumplings evenly without overcrowding and top each with a little mozzarella.
Step 6
Thin another cup of marinara with a little water and spoon it between the dumplings. Cover and steam for approximately 15 minutes, or until the wrappers are soft and the filling is cooked through. Garnish with basil and Parmesan.

What if the filling is watery?
Drain excess liquid and chill the mixture briefly.
Why: The mushrooms or spinach retained moisture.
Watch for: The filling should hold on a spoon.
What if the wrappers dry out?
Cover them with a barely damp towel.
Why: They were exposed to air.
Watch for: The wrappers should remain flexible.
What if a wrapper tears?
Patch the tear with a small moistened piece of wonton wrapper.
Why: The wrapper dried out or was overfilled.
Watch for: The filling should stay enclosed on the sides.
What if the dumplings will not stand?
Press each base gently on the work surface.
Why: The bottom was not flattened.
Watch for: Each dumpling should remain upright.
What if the pleats open?
Moisten and pinch the sides together again.
Why: The edges were too dry.
Watch for: The top may remain exposed but the sides must hold.
What if the sauce is too thick to steam the wrappers?
Thin the sauce between the dumplings with a little water.
Why: The marinara was very concentrated.
Watch for: Steam should build under the lid.
What if the bottoms start sticking?
Lower the heat and add a spoonful of thinned sauce around the dumplings.
Why: The pan became dry.
Watch for: The sauce should remain gently bubbling.
What if the wrappers are still firm after 15 minutes?
Add 2 tablespoons water, cover and steam 3 to 5 minutes more.
Why: There was not enough steam.
Watch for: The wrappers should be soft throughout.
What if the mozzarella browns before the filling cooks?
Lower the heat and keep the pan covered.
Why: The heat was too high.
Watch for: The cheese should melt without scorching.
What if the filling is under temperature?
Cover and steam longer, checking every 2 minutes.
Why: The dumplings were large or crowded.
Watch for: Check the center of a large dumpling with an instant-read thermometer; the stuffed filling should reach 165°F. Wrapper softness or cheese color alone does not confirm doneness.
What can I substitute for Italian sausage?
Use 8 ounces ground turkey seasoned with Italian herbs and cook to 165°F.
Why: It is leaner and needs poultry-safe doneness.
Watch for: Add a teaspoon of oil if the pan is dry.
What can I substitute for button mushrooms?
Use 3 ounces finely chopped cremini mushrooms.
Why: They cook with a similar texture.
Watch for: Cook until their liquid evaporates.
What can I substitute for whole-milk ricotta?
Use 1 cup small-curd whole-milk cottage cheese, drained and blended smooth.
Why: It supplies similar moisture and protein.
Watch for: Drain well so the filling stays firm.
What can I substitute for wonton wrappers?
Use square dumpling wrappers of similar size.
Why: They shape and steam similarly.
Watch for: Keep them covered while working.
What can I substitute for olive oil spray?
Brush the pan lightly with olive oil.
Why: A thin coating prevents sticking.
Watch for: Do not leave pools of oil.
