Lasagna Shumai Dumplings
These little dumplings have a special place in my heart. I entered this recipe in a contest at the airline where I worked, won, and it featured in their monthly onboard magazine! It was such a lovely way to share something from my kitchen with the people traveling on our flights. I took the comforting flavors of Italian-American lasagna and tucked them into Chinese shumai-inspired wonton dumplings, with sausage, ricotta, spinach and cheese inside. They cook together in a skillet of marinara with mozzarella melting over the top. Every time I bring that pan to the table, it reminds me of a very proud moment in my cooking life.

Chef Notes
- Cool the sausage mixture completely before adding the egg-and-cheese mixture.
- Leave the tops slightly open but pinch the pleats securely so the dumplings stand upright.
- Nutrition counts two cups of marinara used in the method, with generic 9 g wonton wrappers. Unmeasured spray and extra toppings are excluded.
- How do you know the protein is done? Cook the raw pork or beef Italian sausage to 160°F before cooling it for the filling, or 165°F for poultry sausage. After adding the egg and cheese and filling the wrappers, heat the centers of the finished stuffed dumplings to 165°F. Insert a thin-tip instant-read thermometer into the center of several dumplings without touching the pan. The filling should look opaque and feel firm and set, and the wrappers should be tender. Temperature, not appearance or feel alone, is the safety check.
