Japanese Miso Fried Rice with Shiitakes and Vegetables

I always found myself working trips to Japan, and one of our layover towns was Narita. We’d land, get showered and head into town for a delicious bowl of something Japanese—and it always came with really good rice. I thought how fun it would be to take Chinese-style fried rice and mix it with Japanese flavors. I’m not sure whether that idea came before or after the three beers I usually had at the karaoke place after dinner, but the thought happened in Japan, and that’s what matters! My version brings miso, shiitake mushrooms and a little mirin to a colorful pan of rice, vegetables and eggs, with butter adding the comforting richness I love. It’s a little memory of Narita brought home to my kitchen.

Mary’s Introduction

Cold rice, crisp-edged shiitakes and colorful vegetables come together under a savory Japanese soy-miso glaze. Butter adds richness while sesame oil, mirin and ginger keep the fried rice aromatic and balanced.

Why These Flavors Work

Miso and soy create deep umami, rice vinegar and mirin balance salt with acidity and sweetness, and butter enriches the crisp rice. Shiitakes reinforce the savory Japanese profile.

Chef Notes

  • Cold day-old rice fries more cleanly because its surface is drier.
  • Pour the seasoning onto the hot pan rather than directly over the rice to concentrate its flavor.
  • How do you know the protein is done? For this egg-and-rice dish, check the center of the hot mixture with an instant-read thermometer, without touching the pan. Egg dishes must reach at least 160°F; because the recipe reheats previously cooked rice, heat the finished fried rice to 165°F. Eggs should be fully set, firm and opaque with no liquid remaining. Temperature determines safety.
