Sliced Brussels Sprouts with Italian Sausage
This has been one of my go-to side dishes, and it’s easy to see why once you taste it. A little spicy Italian sausage does wonders for these Brussels sprouts, seasoning them with all those delicious pan drippings as they cook. Shallot and a touch of smoked paprika add warmth, and Parmesan gives them a savory finish. I keep the sprouts tender with a little bite, so they hold their own alongside the sausage. It’s a familiar American dinner-table side with Italian flavor worked into every forkful—the kind of dependable favorite I’m always happy to make again.

Mary’s Introduction
Why These Flavors Work
Spicy Italian sausage adds savory richness and rendered drippings that coat the Brussels sprouts, while shallot brings sweetness and smoked paprika adds gentle depth. Chicken stock helps the sprouts become tender, and Parmesan finishes the dish with salty, nutty flavor that complements both the sausage and vegetables.

Ingredients
Halved Brussels Sprouts with Italian Sausage
Instructions
Chef Notes
- Keep the sausage drippings in the pan because they season and coat the Brussels sprouts.
- Remove the lid for the final cooking stage so the stock evaporates and the Brussels sprouts remain al dente rather than becoming wilted.
- How do you know the protein is done? Check the thickest sausage piece with an instant-read thermometer. Pork or beef Italian sausage must reach 160°F; poultry Italian sausage must reach 165°F. The center should no longer look raw or translucent and the sausage should feel firm while remaining juicy, but temperature—not appearance or feel alone—is the safety test.
