Italian Baked Halibut

For one of my dinner parties, I bought eight oval individual serving dishes so I could give each person their own beautiful, colorful dinner straight out of the oven. This halibut is exactly the kind of dish I had in mind! Tomatoes, olives, roasted peppers, lemon and basil bring Italian coastal inspiration to each little baking dish, while pine nuts add a delicate crunch. I like serving it with rice to catch those lovely cooking juices. It’s one of my favorite ways to prepare fish for company—simple to put together, lovely to bring to the table, and special enough to make everyone feel a little spoiled.

Mary’s Introduction

This simple baked halibut brings Mediterranean color and flavor to the table with tomatoes, olives, lemon, roasted peppers and basil. Pine nuts add a delicate crunch while olive oil keeps the fish moist.

Why These Flavors Work

Tomatoes, lemon and roasted peppers brighten the mild halibut, while olives and Parmesan-like pine-nut richness add savory Mediterranean depth. Basil and garlic tie the toppings together.

Chef Notes

  • Use a baking dish that holds the fish and toppings snugly without crowding.
  • Nutrition assumes one tablespoon of olive oil for the whole dish. Rice served alongside is not counted; add the rice portion separately if used.
  • How do you know the protein is done? For halibut (fish and seafood), check the thickest center with an instant-read thermometer: it must reach 145°F. The flesh should be opaque and firm and separate into flakes. Temperature determines safety.
